How expensive/involved is converting a dual handle shower faucet into a single handle faucet?

The shower is original to the house (mid-1960's) and the pressure has gone south. The shower and surround are still in extrodinarily good shape, so we only want to change out the handle(s) and shower head (which we did in our master bath and it completely revived the pressure in there). We have access thru a closet on the other side to do so fairly easily. How expensive and involved should it be to change over to one handle instead of two? It's a tiled wall. Is there such a thing as an elongated or wide plate to cover the holes so we don't have to retile?
